These No-Bake Brownie Bites are vegan and gluten-free! They are the perfect healthy snack or dessert to satisfy your sweet tooth. Once you taste them you won’t believe they are nutritious!

I love making these no-bake brownie bites and they can be made vegan and gluten-free. They are super easy to make and require only a few simple ingredients that you most likely already have in your pantry.  These go great as a treat in kid’s lunches or for a little snack throughout the day.  I love to have one or two after a meal for a little taste of something sweet.  My family loves them as well.  The last time I made these, I caught my daughter sneaking in the refrigerator to get the last one.  Trust me, they will not go to waste!

I started making these vegan and gluten-free no-bake brownie bites a couple of years ago when I was starting a vegan bakery from home.  I was experimenting with different recipes that I could sell on my website and once I tasted these I knew I had to add them to the list.  While the baking business didn’t end up being the best idea for me, I now get to share these delicious recipes for free! They remind me of a healthy version of a Buckeye.  If you aren’t from Ohio you may not know what that is. It’s a ball of heaven or a ball of peanut butter dipped in chocolate.  If you’ve never had one I suggest finding one!

Make Mixing Easy

The first time I made these no-bake brownie bites I mixed them by hand.  This can be messy and a pain in the butt.  Eventually, I got a Ninja Food Processor that also came with a plastic blade attachment for mixing dough.  This has been a game-changer in my kitchen!  I use this attachment all the time.  It’s great for cookie dough and any protein bites/energy balls.

 

The Secret to Making Protein Bites Taste Like Cookie Dough

The recipe for these no-bake brownie bites is gluten-free.  When I first made this recipe I used almond flour and they were amazing! For all of my other protein bite/energy ball recipes, I use oat flour and this is my “secret sauce”.  If your diet doesn’t require you to be gluten-free you can substitute oat flour for this recipe as well.  Making oat flour is so simple.  I put the oats in my food processor and grind away!  It’s like magic!  You just turned healthy old fashioned oats into flour.  You can substitute this flour for just about any recipe to make it healthier. Again, this Ninja comes in handy!

Equipment

  • Ninja Food Processor with a Plastic Blade (optional)
  • Food Processor for making oat flour (if you choose to use oats instead of almond flour)

Ingredients

  • 3/4 Cup Almond Flour Can substitute oat flour for non-gluten-free option
  • 3/4 Cup Cocoa Powder
  • 2 Tbs Ground Flax
  • 1/2 Cup Dairy-Free Mini Chocolate Chips
  • 3/4 Cup Peanut Butter or Almond Butter
  • 1/4 Cup Agave or Pure Maple Syrup
  • 1 Tsp Vanilla Extract
  • 1-3 Tbs Almond Milk

Instructions

  • If using oats instead of almond flour, grind oats in a food processor until flour consistency.
  • Add all ingredients except almond milk together in a large bowl or food processor with plastic blade.
  • Mix until well combined and you are able to form into balls. If the dough is too dry add almond milk a tablespoon at a time until you can form into balls.
  • This should make about 28 Bites. Enjoy right away or store in an air-tight container in the refrigerator for up to 2 weeks.
