Plant-Based Banana Cinnamon Granola

This Plant-Based Banana Cinnamon Granola is the perfect healthy and delicious breakfast or snack.  It is simple to make and you only need 6 staple ingredients.  This vegan granola recipe is so easy!  You really can’t beat the crunchy, banana, and cinnamon flavor, especially in the fall.  This will become your new favorite low-fat and dairy-free homemade breakfast!

When my husband and I first started eating vegan this was one of the first recipes I tried.  I loved having cereal in the morning, but it can be hard to find a healthy cereal that isn’t loaded with sugar.  If you are a cereal lover like me, I highly recommend checking the ingredients on the box before making this your goto breakfast.  Better yet, try this healthy and homemade plant-based banana cinnamon granola for the perfect vegan breakfast.

The best part about this granola is there are so many recipes you can use it for. It stores great in the refrigerator, so you can make a batch, store it, and bring it out when you need it.  You can also eat it every morning for breakfast if you love it.  The possibilities are endless!

Just to list a few:

  • Eat it just like you would cereal and top with your favorite fruit and add some almond or soy milk.  I love adding frozen berries.  They are cheaper than fresh if you buy the big bags in the frozen section.  They also last a lot longer, obviously.  Just let them sit out for about 15 minutes and then you have some extra juice to drizzle on top too!
  • Sprinkle some granola on top of your favorite Nice Cream.  Try this Blueberry Banana Nice Cream with some fresh fruit and you will have one amazing healthy dessert.
  • This granola would go great on top of your smoothie bowl in the morning.  Try this smoothie bowl recipe and add 1/4 cup of granola to give it a little crunch
  • This granola also makes a great snack just the way it is.  Just grab a handful and enjoy!

Tips for Making the Perfect Granola:

  • Use Old Fashioned Oats.  No Quick Oats.
  • Make sure to use ripe bananas.  You want them to be browning and soft.  They will mash so much easier and have better flavor. This goes for pretty much any baking recipe that involves bananas.
  • Line the baking sheet with parchment paper to make stirring easy and to prevent the granola from burning on the bottom of the pan.
  • Gently mix the granola while it’s baking every 10 minutes.  This helps the granola bake evenly, but don’t crush it too much or you won’t have any of the big clusters we love.
  • Let it cool completely before storing in an air-tight container. It will get crunchier as it sits and cools.

Additional Optional Add-Ins: (These can be added in before or after baking)

Plant-Based Banana Cinnamon Granola

Ingredients:

  • 8 Cups Old Fashioned Oats
  • 2 Cups Pitted and Chopped Dates
  • 2 Ripe Bananas
  • 1 Tsp Salt
  • 2 Tbsp Cinnamon
  • 1 Tsp Almond Extract

Directions:

  1. Preheat oven to 275 degrees and line 2 large baking sheets with parchment paper.
  2. Add oats to a large bowl.
  3. Mix dates with 1 cup of water and boil for 10 minutes.
  4. Mash bananas and mix in salt, cinnamon, and almond extract.
  5. Add dates to mixture and blend in a food processor.
  6. Pour mixture over oats and mix until oats are covered evenly.
  7. Spread oats onto 2 baking sheets and bake for 50 minutes.
  8. Stir oats every 10 minutes to make sure they bake evenly.
  9. Remove from the oven and let the oats cool completely.  They will get crunchier as they cool.
  10. Store in an air-tight container.
