It’s that time of year to head to the apple orchard and get fresh crisp apples.  I know when we go every year we end up with more apples than we can eat.  This is a great excuse to make some delicious fall apple desserts.  Today I decided to go with these vegan apple crisp bars and they did not disappoint!

These apple crisp bars are so easy to make and made with only whole ingredients.  They don’t take long to make and they will leave your house smelling amazing!  I’ve enjoyed these bars with vegan vanilla ice cream or straight out of the pan.  I’m looking forward to trying more apple recipes soon.  Believe it or not, I have never made apple pie, so I think that’s my next task, but for now, let’s get into this recipe.

Substitutions for This Recipe

  • Coconut Oil – 1. Vegan butter or regular butter if you are not vegan   2.Grapeseed oil or Sunflower oil. 
  • Pure Cane Sugar- 1. Granulated Sugar   2. Monkfruit Sweetener 
  • Whole Wheat Flour- 1. White Flour   2. Oat Flour (grind up old-fashioned oats in a food processor) 3. Almond Flour for gluten-free  4. Coconut Flour
  • Oats- 1. Gluten-Free Oats
  • Apples- 1. Cherries  2.  Blueberries  3. Raspberries 4. Peaches (you could also mix all the berries and make this more of a berry cobbler)

Ingredients

Crust

  • 1/3 Cup Coconut Oil
  • 1/4 Cup Pure Cane Sugar
  • 1 Tsp Vanilla
  • 1/4 Tsp Salt
  • 1 Cup Whole Wheat Flour

Filling

  • 2-3 Large Apples Peeled and Diced
  • 2 Tbsp Whole Wheat Flour
  • 2 Tbsp Pure Cane Sugar
  • 1 Tsp Cinnamon
  • 1/8 Tsp Nutmeg

Topping

  • 1/2 Cup Old Fashioned Oats
  • 1/3 Cup Pure Cane Sugar
  • 1/4 Tsp Cinnamon
  • 1/4 Cup Whole Wheat Flour
  • 2 Tbsp Coconut Oil

Directions

  1. Preheat oven to 300 degrees.  Spray an 8×8 inch pan with non-stick spray.
  2. First, make the crust.  Mix together coconut oil, sugar, vanilla, and salt. Mix in flour until well combined. Press mixture on the bottom of the pan and bake for 15 minutes.
  3. Now make the filling while the crust is baking. Combine apples, flour, sugar, cinnamon, and nutmeg and set aside.
  4. Last, make the topping. Stir together oats, sugar, cinnamon, and flour.  Add solid coconut oil in chunks and mix well.  You may have to combine with your hands to get it crumbly.
  5. Remove crust from the oven and turn up the oven temperature to 350 degrees. Layer apples on top of the crust and sprinkle with the topping.
  6. Bake for 30-35 minutes.
  7. Cool bars completely before cutting.  You can pop them in the refrigerator to speed up the cooling process.
  8. Store any leftovers in the refrigerator for up to 5-7 days.
